Desserts


Blueberry Almond Coffee Cake

This was delicious!!!!

Cake: 1/2 cup silvered almonds
1 cup of sour cream ( I used vanilla yogurt)
1/2 cup of milk
2 tbsp sugar
2 pkgs Martha White Blueberry Muffin Mix
Glaze: 1 cup powdered sugar
2 tbsp milk
1/4 tsp almond extract ( I added some to the cake mix bc I just love almond extract!)

Mix sour cream, milk, sugar, and muffin mix. pour in 9 inch Square of Circle Pan. Sprinkle almonds on top. Cook for 35-40 minutes or until brown.
Mix Glaze and pour on top of cake immediately after you pull from over. Cool 10-15 minutes before serving!

Entrees


TExas Beef Skillet

1 lb of ground beef
3/4 cup chopped onion (i left it out bc thomas hates onion and it was still good but it would probably be better with onion)
1 can of rotel mild
1 can of kidney beans
1/2 cup of rice
1.5 teaspoons of chili powder
1/2 teaspoon garlic salt
1 cup of shredded cheese
1 box of jiffy corn bread mix

Brown meat, drain fat, then add beans and rotel with juice, add uncooked rice, and seasonings and onion. Bring to boil then reduce and simmer for 20 minutes.
Mix up Jiffy mix.
Pour meat mix in a square casserole dish then pour jiffy dough over it, and cover with cheese. I baked it for about 15 minutes or until bread it down. It was delicious definitely a boy lover!
Crock Pot Chicken
(This fills up a smaller crock pot for 3-4 servings)

6 frozen chicken tenders but you could do breast
2 TBSP Butter
salt and pepper
2 tbsp of greek seasoning (cavenders)
a can of cream of chicken
1/2 cup of sherry/ cooking wine
1 tbs chopped onion (i used dried onion)

Throw it all in the pot cook for 4-6 hours. It was awesome and filled the apartment with a delicious smell. I served it over noodles because it has a great sauce with it.
