Entrees


TExas Beef Skillet

1 lb of ground beef
3/4 cup chopped onion (i left it out bc thomas hates onion and it was still good but it would probably be better with onion)
1 can of rotel mild
1 can of kidney beans
1/2 cup of rice
1.5 teaspoons of chili powder
1/2 teaspoon garlic salt
1 cup of shredded cheese
1 box of jiffy corn bread mix

Brown meat, drain fat, then add beans and rotel with juice, add uncooked rice, and seasonings and onion. Bring to boil then reduce and simmer for 20 minutes.
Mix up Jiffy mix.
Pour meat mix in a square casserole dish then pour jiffy dough over it, and cover with cheese. I baked it for about 15 minutes or until bread it down. It was delicious definitely a boy lover!
Crock Pot Chicken
(This fills up a smaller crock pot for 3-4 servings)

6 frozen chicken tenders but you could do breast
2 TBSP Butter
salt and pepper
2 tbsp of greek seasoning (cavenders)
a can of cream of chicken
1/2 cup of sherry/ cooking wine
1 tbs chopped onion (i used dried onion)

Throw it all in the pot cook for 4-6 hours. It was awesome and filled the apartment with a delicious smell. I served it over noodles because it has a great sauce with it.

    FRESH STRAWBERRY TART

    2 T butter
    2 Cups miniature marshmallows
    2 1/2 cups rice krispies
    1 cup whipping cream
    1 pint fresh strawberries
    1 (3 1/2- ounce) package instant vanilla pudding
    1 1/4 cups milk
    1 tsp. almond extract

    1) Melt butter in a large saucepan over low heat. Add marshmallows, heating until marshmallows are melted, stirring frequently.
    2) Remove the saucepan from heat and stir in cereal until well - mixed.
    3) Pat mixture in an oiled 9-inch pie pan. (it helps to rub your hands with a little oil or butter)
    4) Beat pudding mix, milk, whipping cream, and extract together at high speed for 5 minutes or until stiff peaks form. Spoon the mixture into the cereal crust. Refrigerate for at least 3 hrs. Just before serving, wash strawberries and remove stems. Gently press strawberries stem side down into cream filling. ( I cut the strawberries in half and press them down).

  2. CHICKEN ENCHILADAS

    1 T butter
    1 medium onion chopped
    1 (4 1/2) oz can chopped green chiles, drained
    8 oz cream cheese, cut up and softened
    3 1/2 cups chopped cooked chicken breast ( I buy the rotisserie chicken and shred the meat - use leftover meat for salads or something else)
    8 flour tortillas
    16 oz shredded monterey jack cheese
    2 cups whipping cream

    Melt butter in a large skillet over medium heat; add onion, and saute 5 minutes. Add green chiles; saute 1 minute. Stir in cream cheese and chicken; cook, stirring constantly, until cream cheese melts.

    Spoon 2-3 tablespoons chicken mixture down center of each tortilla. Roll up tortillas, and place seam side down, in lightly greased 13x9" baking dish. Sprinkle with Monterey Jack cheese, and drizzle with whipping cream. Bake at 350F for 45 minutes. 4-5 servings.

  4. Grandma's Fried Rice

    1 lb bacon, cut up
    4 boneless chicken breasts, cubed
    2 - 4 cups cooked rice
    Soy sauce

    Brown bacon in electric skillet. Cook till crispy. Spoon out bacon onto paper towel covered bowl. Add cubed chicken to skillet and cook until done and tender. (You may cook chicken in bacon grease or drain grease). Add cooked rice to skillet. Mix chicken and rice together, then add soy sauce, salt and pepper to taste. Mix in bacon. Let steam for 10 - 15 minutes.

    You could add diced vegetables, if desired.

  5. These recipes are made for leftovers, and fool proof. No worries. Enjoy.

    SouthWestern Roll-ups
    1 10oz frozen chopped spinach, thawed
    1 10oz envelope fajita seasoning mix
    3 6oz southwestern grilled chicken strips
    (I use whatever I can find @ the store)
    1 can of black beans rinsed and drained
    1 can mexicorn
    1/2 cup water
    1 1/2 cups of monterry jack cheese

    Literally put everything in a big pot on the stove and mix together. Heat until semi bubbly. Serve in flour tortillas, or chips with sour cream and salsa.

    Lazy CrockPot Cubes Steak
    1 package cube steak (6-8) pieces
    1 pkge Lipton dried onion soup
    2 cans cream of mushroom soup
    1 can of water

    Season cube steak and brown each side in a small amount of oil in pan. Do NOT cook all the way through. Spray crock pot with "Pam" and placed browned meat in bottom. Mix dry onion soup, mushroom soup and water together in bowl. Pour over meat and cook on LOW 6-8 hours.

    Cornbread Salad (great for picnic or family get together) This is more involved also. :)

    1 box Jiffy cornbread (prepared, follow directions on box)
    2 pgks dry ranch seasoning
    1 8oz cont. sour cream
    1 cup mayo
    2 lg tomatoes
    1 green pepper (chopped)
    1/2c. chopped onion
    1 can pinto beans rinsed and drained
    2 cans corn, drained
    2 c. mexican cheese (1 reg bag @ store)
    bacon bits (real)

    In bowl place tomatoes, peppers, onion, beans, corn set aside.
    Mix ranch, sour cream and mayo together, set aside.

    Crumble in LARGE bowl 1/2 cornbread, add 1/2 veggie mix, sprinkle with cheese, bacon bits. Repeat layers ending with dressing. Top with cheese and bacon bits.

    After typing all of this I immediatly regret it. This is not a hard reciepe but requires lots of ingredients,time and clean up. It's super yummy and worth it if you want to impress your new in-laws! lol. Again, this will feed a lot and keeps well in the fridge.

  7. Pork Tenderloin with Rosemary potatoes and sweet and sour glaze

    Rub-Equal parts of pepper, red pepper, cumin, garlic powder, and salt (just enough to coat eat 2in cut of pork tenderloin)

    After coating the pork, wrap the pork and a couple bay leaves in siran wrap and let marinade for at least 2 hours.

    Pan sear the pork in an iron skillet. While it is searing cut up potatoes (1 per person) and coat them in olive oil, salt and rosemary. Then add them to the skillet with bay leaves.

    Bake in skillet for 30-40 minutes (pork reaching 160) at 400 degrees.

    Glaze
    Maple syrup, dijon mustard, and orange juice whisk and pour over pork and potatoes
